Coriander seed oil

Coriander seeds, also known as coriander fruit, cilantro seeds, or Chinese parsley seeds, among other names, possess a mild, spicy aroma with a blend of sage and lemon notes. The fragrance resembles that of cilantro and lily of the valley—soft, sweet, and spicy, with a fleeting yet penetrating quality. Overripe seeds have a poorer aroma. The seeds are spherical in shape, with a pale yellowish-brown surface. Mature fruits are hard, aromatic, and slightly pungent in taste. Coriander seeds are one of the ingredients used in preparing spices such as curry powder.
